Elderberry Syrup

  • Saucepan

  • Elderberries As many as you want to collect! Half a bag for life provides around 15-20 servings.
  • Brown sugar See below for quantities
  • 1 Orange
  • 1 Lemon
  • 4-5 Cloves
  • 1 Cinnamon stick


  • Remove all the berries from the stalks using a fork. Pick out all small stalks and remove any other debris
  • Wash elderberries
  • Simmer the berries with water (2:1 ratio of berries to water) for roughly 20 minutes occasionally mashing them with a potato masher
  • Using a fine mesh sieve, allow the juice to drip through until a bowl
  • Next, for every 500ml of liquid, you need to add 250g of sugar. Add both of these to the saucepan, along with a couple of slices of lemon and a couple of slices of orange. Also, add your spices.
  • Simmer for about 20 minutes
  • Use a funnel to decant the syrup into a sterilised bottle using the sieve to remove fruit and spices.
  • Store in fridge to keep fresh for up to 3 months
